Yes — choose all pages, the first page only, or type pages like 2-5.

One stamp puts a single watermark in the centre of each page; Repeating tiles it across the whole page, which is harder to crop out.

Not cleanly — it's added to the page content like any PDF editor does. Keep your original un-watermarked file if you'll need it.
